It is a perennial species, evergreen and spontaneous in Etna’s sunny areas, which confers richness of essential oils (Thymol, Carvacrol). The stem, including flowers and leaves, harvested by hand during the summers months. The bunches are dried in a natural way, in twilight conditions. When the correct degree of dessication is reached, flowers and leaves are ready to be cleanse and chopped.
Oregan is extremely flexible in cooking thanks to the intense aroma and to the strong taste. Excellent on pizza, bruschetta, soup, first and second meat and fish courses.
