The Territory / A Muntagna

 

SARI farm is located in the Grotta Comune district (Trecastagni – Catania), within the Etna Park. The district is protected by the natural slopes of Mount Ilice and Mount Gorna, volcanic cones that are no longer active, in the fascinating south-east side of the volcano. The “Muntagna” inebriates us with its colors and scents, unveiling its secret story thanks to its beauties: the vineyards, the Mediterranean scrub groves that look at the sea from afar, the cultural terraces, contained by the typical dry stone walls in lava stone, which host native and ancient spice varieties. In every season of the year, the temperature changes create a microclimate favorable to Etna’s rich biodiversity.

 

On the island of the gods, where the earth communicates with the sky, in a privileged position from a panoramic, landscape and climatic point of view, we produce spices and grow aromatic and medicinal plants.

The passion for the land comes from afar, since Roberto went into the woods with his parents, and there he immersed himself in the uncontaminated places that can be still found on the slopes of Etna.

 

In the life of Roberto Carbone, founder of SARI Farm, the passion for food and food production, nurtured by his grandparents in the family vineyard, is also quickly noticed.

 

Roberto enrolled in the Degree Course in Food Science and Technology at the University of Catania and in 2018 he graduated with a thesis entitled “Mycotoxicological risks of saffron: a spice with a thousand properties”.

Roberto continued his studies for another two years, taking a Master’s Degree in Food Science and Technology with a thesis entitled: “Survey on the consumption of Sicilian wines and the effects of climate change”. He returns to the ancient passion for production learned from his grandparents on the olive groves. But SARI was already in progress, a young farm born in 2018, the day after the Bachelor’s degree.

 

At the same time as the entrepreneurial activity already started, Roberto continues to improve his studies, in a process of continuous innovation, with passion and commitment. In November 2020 he qualified for the Order of Food Technologists of Sicily and Sardinia (OTASS), presenting a project for the supply chain of officinal herbs.

SPICES

In the SARI spice basket we find many of the typical crops of the lands on the slopes of Etna and some innovations: Saffron, Lavender, Oregano, Chilli pepper variant Habanero black chocolate, Sage, Mint, Elicriso and Rosemary. You can buy them in our online shop.

JAMS

Ideal for an aperitif based on cheese and wine or to give a strong and volcanic flavor to your recipes. Our extra jams combine Etna fruit, such as Coscia Pears and Cola Apples, with spices such as Lavender and Rosemary. And why not let yourself be tempted by the spicy sweet of Sicilian Chilli?

SAUCES AND DRESSINGS

A poor dish of the Sicilian tradition: the dried broad bean cream (maccu), embellished with Etna mint. The Sicilian tomato sauce in its “arraggiata” version, with the addition of chilli in the Habanero black chocolate variant. These are the leading products of our line of typical Sicilian condiments and preparations!

NATURAL DYES
